Heat the pan

Heat the oil in a small non-stick pan.

Cook the first omelette

Pour half of the egg mixture into the hot pan and cook for 1 minute until the eggs start to set. Distribute half of the sliced chicken over the surface.

Repeat the process

Repeat with the remaining mixture for the second omelette. Serve with your favorite salad.

Tips and variations

  • No chicken? Don’t hesitate to add diced bacon or bacon bits.
  • Add fresh herbs like chives or parsley for even more freshness.
  • For a more indulgent version, add some grated cheese to the egg mixture.

Anti-waste tips

This recipe is perfect for using up your leftover chicken! You can also slip in other vegetables hanging around in the fridge: cherry tomatoes, spinach, mushrooms…

Slightly soft zucchini are perfect for this recipe - they don’t need to be super firm.
