Recipe steps
Prepare the eggs
Beat the eggs with water in a bowl. Add the grated zucchini and season with salt and pepper.
Heat the pan
Heat the oil in a small non-stick pan.
Cook the first omelette
Pour half of the egg mixture into the hot pan and cook for 1 minute until the eggs start to set. Distribute half of the sliced chicken over the surface.
Finish cooking
Continue cooking for 1 to 2 minutes, until the egg is golden underneath and just set on top. Slide the omelette onto a plate, folding it in half.
Repeat the process
Repeat with the remaining mixture for the second omelette. Serve with your favorite salad.
