Recipe steps
Prepare the caramel
Melt the butter in a skillet or flambé pan. Add the brown sugar and stir well until you get a smooth caramel.
Sauté the banana
Peel the banana and cut it in half lengthwise. Place it in the caramel and cook gently, coating it well with the sauce. Sprinkle with a pinch of cinnamon.
Flambé with flair
Pour the banana liqueur and white rum over the banana. Tilt the pan slightly toward the flame (or use a long lighter) to ignite the alcohol. Gently baste the banana with the flaming liquid using a spoon.
Serve immediately
As soon as the flames die out, plate the banana, drizzled with its caramel. Serve as is or with a scoop of vanilla ice cream for those with a sweet tooth.
Tips and variations
- No banana liqueur? Add more rum or use dark or amber rum for more depth.
- For an even more indulgent dessert, serve on a warm waffle or with a dollop of whipped cream.
- For an alcohol-free version, simply let your bananas caramelize nicely in the pan and enjoy.
Anti-waste tips
Overripe banana? Perfect here! The riper it is, the more tender and sweet it will be once caramelized.
If you have caramel left at the bottom of the pan, drizzle it over ice cream or into plain yogurt the next day.
