The Dutch Baby is that spectacular pancake that puffs up in the oven like magic. With tender pears, it transforms a simple brunch into a delicious and convivial moment.

Recipe steps
Prepare the batter
In a blender or with an electric whisk, mix the flour, milk, eggs and salt until you get a perfectly smooth batter.
Start cooking the Dutch Baby
Preheat the oven to 200°C. Melt 2 tablespoons of butter in a 23x23 cm or 28 cm baking dish. Pour the batter into the buttered dish and bake for 20 minutes.
Prepare the sausages
Cut the pears into 1 cm thick slices and sauté them in butter for 2-3 minutes over medium heat. Sprinkle with cinnamon if desired.
Caramelize the pears
Empty the fat from the pan and add 1 tablespoon of butter.
Tips and variations
- Always choose ripe pears so they caramelize perfectly.
- The Dutch Baby deflates quickly once removed from the oven, that’s normal! Serve it immediately for the spectacular effect.
- You can add sausages or grilled bacon for a sweet and savory version
