Recipe steps
Prepare the crostini
Preheat the oven to 200°C. Cut the half baguette into 1 cm thick slices. Brush them with olive oil and arrange on a baking sheet. Bake for 10 to 15 minutes until the edges are golden.
Prepare the pesto
While the bread is baking, blend the basil leaves, garlic, pine nuts, and pecorino in a food processor. Pulse until you get a grainy texture. Gradually add the olive oil and blend until fully incorporated. Taste and season.
Prepare the pear
Wash and cut the pear into thin slices. Arrange them on a serving plate.
Assemble the crostini
Spread each slice of toasted bread with pesto, arrange the pear slices on top, and finish with a turn of black pepper mill if desired.
Tips and variations
- No pine nuts? Replace them with walnuts or sliced almonds lightly toasted.
- For a more indulgent version, add some parmesan shavings on top.
- You can replace the pear with fresh figs or peach slices depending on the season.
Anti-waste tips
Don’t throw away the pear peels!
You can for example:
- Infuse them in hot water with cinnamon for a fragrant herbal tea
- Add them to your compost to enrich the soil
- Use them in a smoothie after washing them well
