Recipe steps
Prepare the ingredients
In a food processor, place all ingredients except the filtered water and pulse until you get a roughly chopped mixture.
Add water and blend
Add the filtered water and pulse a few more times until the gazpacho is mixed but still retains some chunks.
Let it chill
Pour into a glass bowl and cover with plastic wrap. Refrigerate for 20 to 25 minutes, or until the gazpacho is well chilled.
Serve
Serve immediately in small glasses or bowls. Garnish with diced peaches and a cucumber slice if desired.
