Orange Upside-Down Cake

Recipe steps
Prepare the orange glaze
In a large saucepan, mix water and sugar over low heat without boiling, until the sugar completely dissolves. When the syrup starts to thicken slightly, add the orange slices in small batches. Let simmer gently for 10 minutes uncovered until the peel is tender.
Arrange the oranges
Carefully remove the orange slices and set aside the syrup. Arrange the slices at the bottom of your prepared pan. Add a little water to the syrup if needed and simmer until you get a light honey color. Pour enough syrup over the slices in the pan.
Prepare the cake batter
Preheat oven to 180°C (350°F). Butter a 20cm (8-inch) pan. Sift the flour. In a mixing bowl, combine all cake ingredients with an electric mixer on low speed until the mixture is smooth. Continue beating until you get a smooth, light batter.
Bake the cake
Pour the batter into the pan over the oranges. Bake for 45 minutes. Test doneness with a toothpick that should come out clean.
Unmold and finish
Let the cake cool then carefully flip it onto a wire rack. Poke holes all over the cake with a toothpick and drizzle with the remaining syrup.

Don’t throw away the peels from the oranges you used! You can, for example: - Grate the remaining zest to flavor other desserts or teas - Dry the peels to create a natural potpourri - Candy them in sugar to make homemade candied orange peels
