Kiwi Mousse

Recipe steps
Prepare the gelatin
Dissolve 225g of gelatin in 5 tablespoons of warm water. Mix well until completely dissolved and let cool slightly.
Prepare the kiwis
Peel and blend 225g of kiwis until you get a smooth puree. Strain through a sieve if you prefer a seedless texture.
Soak the sponge
Cut the 20cm sponge cake and delicately soak it with the strong tea. Place it in your mold or glasses.
Whip the cream
Whip 250ml of well-chilled heavy cream until you get firm whipped cream. Keep refrigerated.
Beat the egg whites
Beat the 4 egg whites until stiff peaks form. They should hold perfectly on the whisk.
Assemble the mousse
Gently fold the kiwi puree into the cooled gelatin, then the whipped cream, and finally the egg whites by lifting the mixture.
Let it set
Pour the mousse over the sponge and refrigerate for at least 4 hours so the mousse sets properly.
Tips and variations
- Choose kiwis that are ripe but not too soft for optimal flavor.
- You can replace the tea with sugar syrup flavored with rum or your favorite liqueur.
- For a more indulgent version, add some kiwi pieces to the mousse before it sets.
