Recipe steps

Prepare the batter

Preheat the oven to 180°C. In a large bowl, mix the flours, almond flour, and sugar. Stir well.

Incorporate the liquids

In another bowl, whisk the egg with the milk and cooled melted butter. Gradually pour this mixture into the dry ingredients, then add the diced kiwi.

Shape and bake

Using a spatula, mix gently. Divide the batter into paper cupcake liners and bake for 25-30 minutes, until golden and a toothpick comes out clean.

Prepare the syrup

Meanwhile, in a small saucepan, mix the lime zest, juice, and sugar. Heat over low heat until the sugar dissolves, then simmer for 8-10 minutes until thickened.

Let the cupcakes cool for 10 minutes in the pan, then turn out onto a wire rack. Poke holes with a toothpick and drizzle with warm syrup. Decorate with kiwi slices.
