Recipe steps
Prepare the curry
In a saucepan over medium-high heat, heat the oil and add the finely chopped onions. Cook for 2 minutes. Add the potatoes and carrots cut into small dice, continue cooking for 5 minutes.
Simmer the vegetables
Pour in the water and bring to a boil. Reduce heat and let simmer for 15 minutes. Stir in the Japanese curry mix and continue cooking for 10 minutes. Let cool.
Prepare the turnovers
Preheat the oven to 175°C (350°F). On a baking sheet, cut the puff pastry into squares (1 sheet makes about 4 squares). Using a spoon, fill half of the squares with the cooled curry mixture.
Assemble and bake
Cover with the remaining pastry squares and seal the edges well with a fork. Bake for 20 minutes or until the pastry is golden brown. Serve hot!
Tips and variations
- No Japanese curry on hand? Replace it with a mix of curry powder, turmeric, and a little honey to recreate that characteristic sweetness.
- For a more indulgent version, add some peas or sliced button mushrooms to the mixture.
