Honey and Citrus Roasted Carrots

These honey and citrus roasted carrots prove that a simple vegetable can become extraordinary with a few tricks. The secret? A honey glaze that caramelizes in the oven and a touch of orange that brings unexpected freshness.

Recipe steps
Prepare the oven and carrots
Preheat the oven to 200°C. Peel the carrots and cut them diagonally into slices about 5 mm thick.
Season the carrots
In a large roasting dish, mix the carrots with olive oil and salt. Arrange them in a single layer in the dish.
First cooking
Squeeze the orange and pour the juice over the carrots. Cover tightly with aluminum foil and bake for 10 minutes.
Add the honey
Remove the dish from the oven, remove the aluminum foil and drizzle the carrots with honey. Mix to coat well.
Finish the cooking
Increase the oven temperature to 230°C. Return the carrots to the oven, uncovered, for 10 to 15 minutes until they are tender but still slightly crispy.
Serve
Let cool slightly, sprinkle with chopped parsley or mint, adjust seasoning with salt and pepper, then serve.
Tips and variations
- No orange on hand? A lemon or mandarin will work perfectly to bring that tangy note.
- For a more indulgent version, add some toasted walnuts or sliced almonds before serving.
- These carrots are delicious hot, but also taste great warm in a salad.
