Comforting Red Cabbage & Potato Skillet

Recipe steps
Prepare your vegetables
Cut the red cabbage into thin strips (no need for perfection, at Ugly we love authenticity!). Peel and cut the potatoes into roughly 2 cm cubes. Slice the onions and garlic.
Brown the potatoes
In a large skillet or Dutch oven, heat the olive oil. Add the potatoes and brown them for 10 minutes, stirring regularly.
Add the aromatics
Add the onions and garlic, cook for 3 minutes until they become translucent.
Time for the cabbage
Add the sliced red cabbage and mix well. Pour in 10 cl of water, the apple cider vinegar, and honey. Season with salt, pepper, and add cumin if you have some.
Let it simmer
Cover and cook over medium heat for 15 minutes, stirring occasionally. The cabbage should be tender and the potatoes nice and soft.
Serve
Sprinkle with fresh chopped parsley and enjoy piping hot!
Tips and variations
