Caramelized Tofu Salad with Gala Apples

Who said tofu was boring? This salad proves otherwise with its brown sugar caramelized tofu, crispy Gala apples, and walnuts that add that delightful indulgent touch. A vegetarian main dish that awakens the taste buds.

Recipe steps
Prepare the tofu
Preheat the oven to 180°C. Let the tofu rest on a kitchen towel for 15 minutes, turning once, to absorb moisture. Cut it into 2.5 cm cubes. Lightly brush with olive oil and place on a baking sheet. Bake for 35 minutes, turning halfway through.
Caramelize the mixture
In a small pan, heat the butter and garlic over low heat until the butter is almost melted. Add the apples, cooked tofu, and a pinch of salt. Turn up to medium heat and cook for about 4 minutes.
Finish the caramelization
Add the water and stir every minute for an additional 6-7 minutes, until little moisture remains in the pan. Turn off the heat and incorporate the brown sugar, stirring well to coat everything.
Plate the salad
Arrange the lettuce leaves on plates, add the caramelized tofu-apple mixture on top, and sprinkle with whole walnuts.
Tips and variations
- For a more pronounced flavor, replace the olive oil with peanut oil to brown the tofu.
- No walnuts? Toasted hazelnuts will work perfectly.
- Add some dried cranberries for a tangy touch that pairs perfectly with the apples.
