Recipe steps

Preheat the oven

Preheat your oven to 220°C (425°F). This is the ideal temperature for perfectly golden and crispy wedges.

Prepare the potatoes

Wash the potatoes well (no need to peel them, the skin adds extra crunch). Cut them into wedges about 1.5 cm (½ inch) thick.

Mix the spices

In a small bowl, combine the paprika, cayenne pepper, garlic powder, onion powder, Italian herbs, salt, and pepper. Mix well.

Season the wedges

Place the potato wedges on a baking sheet. Drizzle with olive oil and sprinkle generously with the spice mix. Toss with your hands to coat each wedge evenly.

Bake

Spread the wedges in a single layer on the baking sheet. Bake for 25 minutes, then flip them and continue cooking for 5 more minutes until golden brown.

  • Want more heat? Double the cayenne pepper or add a pinch of smoked chili.
  • For even crispier wedges, soak them in cold water for 30 minutes before drying and seasoning.
