A date that’s approaching a little too fast, and a whole batch can end up in the trash. The product is perfectly fine, but the date is too short to enter a distribution network. We buy the batch, save the brand from a total loss, and offer it to our community at a sweet price. That’s what flash sales are all about.
In 2024, Aare Bio, Bioleguma and Seeland Bio joined forces under the name Cococorsaires to make use of the part of their harvest that didn’t make it to the shelves. A shared brand under the Passion Seeland bio:logique umbrella, and a first product: the Dörrbohne. The dried bean.
A two-century-old method
Present in Swiss kitchens since the early 19th century, listed as part of the country’s culinary heritage, and almost wiped off the pantry shelves with the arrival of frozen food. Mechanical harvest, washing, hand sorting, then blanching and gentle drying: one kilo of fresh beans becomes one hundred grams of dried — denser in protein, iron, magnesium and vitamin C. Whatever doesn’t end up in the bag goes back as compost to next year’s fields.

Away from light, in a dry spot, at room temperature—a cupboard does the trick. Once opened, transfer to an airtight jar and forget about it.
The best-before date isn’t a hard deadline. It’s a quality indicator. With properly stored dry goods, there’s plenty of time!

Taste quality and use
Firm texture once rehydrated, slightly floury mouthfeel, vegetal aroma concentrated by drying. Once cooked, they keep for three days in the fridge and freeze very well.
