Recipe steps
Rehydrate the beans
Soak the beans in a large volume of cold water for 8 to 12 hours.
Cooking
Drain, then cook in simmering unsalted water for 40 to 50 minutes, until tender. Drain (keep a little cooking water aside).
Perfectly roasted mushrooms
Cut the mushrooms. Sauté them over high heat in olive oil, without stirring at first to get a nice golden color. Add the garlic and thyme at the end of cooking.
Bringing it together
Add the beans to the pan with a splash of cooking water. Let simmer for 5–8 minutes to coat and concentrate the flavors.
Finishing touches
Add the vinegar, season with pepper, adjust the salt. Finish with a drizzle of olive oil and optionally some parsley.
