One-Pot Quinoa with Vegetables

This veggie quinoa cooks all by itself in one pot! Broccoli, cauliflower, bell pepper and creamy burrata: a rainbow of flavors that's good for body and soul.

Recipe steps
Sauté the aromatics
Heat the olive oil in a wok or large non-stick pan. Add the minced garlic, dried basil, oregano and crushed red pepper flakes. Let the flavors bloom for a few seconds.
Brown the onions
Add the sliced onions and sauté until nicely golden.
Cook the crunchy vegetables
Add the green bell pepper, broccoli and cauliflower. Cover and cook for a few minutes: the vegetables should be slightly tender but still crunchy.
Add the carrots and tomatoes
Add the sliced carrots and stir-fry for 1 minute. Add the crushed tomatoes, cover and let simmer until they release their juices.
Add the burrata
Add the burrata to bring a creamy texture to the dish. Cover and let it melt for 2 minutes.
Add the quinoa
Season with salt and ketchup, then add the rinsed quinoa. Mix well to coat the grains.
Let it cook
Pour in the water, cover and cook for 10 to 15 minutes until the water is absorbed and the quinoa is fully cooked.
Serve
Sprinkle with crushed red pepper flakes to taste and serve piping hot.
Tips and variations
- No burrata? Fresh mozzarella or even fresh goat cheese will work just as well.
- Add sliced mushrooms with the vegetables for even more deliciousness.
- For a vegan version, replace the burrata with coconut milk or a plant-based cream.
