Recipe steps
Prepare the oven and pan
Preheat your oven to 180°C. Generously butter a 20 cm square baking pan.
Cream the butter and sugars
In a large bowl, beat the softened butter with the white sugar and brown sugar until light and creamy. Add the eggs one at a time, beating well after each addition.
Prepare the fruit mixture
In a medium bowl, mix together the sweet potato purée, grated apple, grated pear, milk, vanilla extract, cinnamon, nutmeg, and ground cloves.
Combine the dry ingredients
In another bowl, combine the flour, baking powder, baking soda, and salt.
Mix the batter
Fold the sweet potato mixture into the creamy preparation and stir until smooth. Then add the dry ingredients, mixing gently, just until the flour is absorbed. Fold in the chopped walnuts and pecans.
Bake
Pour the batter into the prepared pan and bake for about 55 minutes. The cake is ready when a toothpick inserted in the center comes out clean. Let cool before topping with a cinnamon cream cheese frosting.
Tips and variations
- No sweet potato? Kabocha squash or butternut squash work wonderfully.
- You can swap the pecans for crushed hazelnuts or slivered almonds.
- For an even more indulgent cake, add a handful of raisins or dried cranberries to the batter.
Anti-waste tips
Don’t throw away your apple and pear peels!
You can:
- Dry them in the oven at low temperature to make fruit chips
- Steep them in hot water with a cinnamon stick for an autumn-inspired tea
- Add them to your compost to nourish your garden
