Stale bread: its benefits, anti-waste commitment and recipe ideas

We often push it to the back of the cupboard, that slightly dry bread, and end up forgetting about it. Yet it lends itself to countless easy, tasty, and anti-waste reuses.

In Switzerland alone, we waste nearly 170,000 tons of bread each year (≈ 7 billion slices) according to WWF Switzerland in an awareness campaign published in 2019.

The estimate of 2.8 million tons of food wasted each year in Switzerland (≈ 330 kg per person) comes from the FOEN / BAFU (Federal Office for the Environment), figures published in 2020 (based on the reference year 2017).

  • plant proteins, particularly interesting when combined with legumes or cheese,
  • and minerals like magnesium, zinc or iron

Recipe ideas

Recipe idea 1: Italian bread balls

These vegetarian meatballs combine stale bread crumbs, egg and cheese (Pecorino), breaded or not, then cooked in a tomato sauce enhanced with garlic and herbs.

Recipe idea 2: Rustic “pancotto” soup

A traditional Italian dish, pancotto is a rustic soup designed to bring stale bread back to life. Pieces of bread are boiled in a fragrant broth, then seasoned with oil, salt, cheese and sometimes a drizzle of tomato.

Recipe idea 3: Sweet or savory French toast

The classic of classics for recycling stale bread.

  • Sweet version: soak your slices in a mixture of milk + egg + a little sugar → pan-fry → add fresh fruit, cinnamon, maple syrup.
  • Savory version: same base but without sugar, season with salt, pepper, herbs, a little grated cheese → and you get what you need to create your anti-waste crispy-soft brunch.
