Roasted Pears with Ginger and Vanilla

Recipe steps

Prepare the flavored syrup

Preheat the oven to 180°C. In a saucepan, pour the white wine, sugar, vanilla pod split in half, finely sliced ginger, and cinnamon. Bring to a boil while stirring to dissolve the sugar.

Prepare the pears

Cut the pears in half lengthwise and remove the core using a spoon. Place them cut-side down in an oven-safe dish.

Cook the pears

Pour the hot syrup over the pears. Cover the dish with aluminum foil or a lid and bake for 25 to 30 minutes, until the pears are very tender.

Serve

Arrange the pear halves on plates or in small bowls and drizzle generously with the cooking juices. Serve warm or at room temperature.

Tips and variations

  • No white wine? A dry cider or even apple juice will work just fine.
  • For a more indulgent dessert, add a scoop of vanilla ice cream or a spoonful of whipped coconut cream.
  • You can sprinkle some toasted slivered almonds on top when serving for a bit of crunch.
