Honey and thyme roasted pomelos

Five minutes of prep, and the oven does the rest.

Pomelo loves heat. In the oven, its juice caramelizes with the honey while the edges turn beautifully golden, revealing an unexpected sweetness. Fresh thyme tempers the brightness of the citrus, and a pinch of Espelette pepper (optional) adds that little twist you won't forget. Serve hot, with vanilla ice cream or alongside roasted poultry.

Recipe steps

Prepare

Preheat the oven to 200°C (400°F). Cut the pomelos in half. Place the halves on a baking sheet, cut side up.

Season

Drizzle 1 teaspoon of honey over each half. Scatter thyme leaves on top. Add Espelette pepper if you like.

Roast (12 min)

Roast for 12 minutes, until the edges caramelize lightly. Serve immediately.

Tips and variations

  • Serve hot, on their own or with vanilla ice cream.
  • Variation: swap the thyme for rosemary.
  • Also excellent as a side for roasted poultry.
