Grilled Barbecue Potatoes with Yogurt-Chive Sauce

A simple and friendly recipe for summer barbecue evenings.

Ingredients

  • olive oil
  • paprika powder
  • yogurt
  • clove of garlic
  • chives
  • salt and pepper

Recipe steps

Pre-cook the potatoes

Cook the whole potatoes for 12 minutes in boiling salted water (they should remain firm). Drain and let cool slightly.

Season

Cut the potatoes in half and toss them with olive oil, paprika, salt and pepper.

Grill

Grill them on the barbecue (or in a grill pan) for 8 to 10 minutes, turning regularly, until golden brown and slightly crispy.

Prepare the sauce and serve

Mix the yogurt, crushed garlic and chopped chives, season with salt and pepper. Serve the grilled potatoes with the sauce on the side.

Tips and variations

  • Add some Espelette pepper to the sauce for an extra kick.
  • This recipe also works great in the oven or on the stovetop if you don’t have a barbecue.

Anti-waste tips

“Ugly” or irregularly sized potatoes are perfect here: simply cut the larger ones in half for even cooking.

A bunch of chives that’s starting to wilt can still be used—just remove any damaged stems.
