Dark Chocolate Prunes with Toasted Almonds

Recipe steps

Prepare your workspace

Line a baking sheet with parchment paper and keep it within reach.

Melt the chocolate

Chop the dark chocolate into small pieces and place it in a saucepan. Melt over very low heat, stirring constantly until you get a smooth and glossy texture. Remove from heat and let it cool slightly.

Stuff the prunes

Insert a toasted almond into the center of each prune. Tip: use the pointed end of the almond to pierce more easily. If needed, use a small knife to create an opening.

Coat with chocolate

Using a fork or a toothpick, dip each stuffed prune into the melted chocolate, turning it to coat evenly. Let the excess drip off by running the bottom along the edge of the bowl, then place on the prepared baking sheet.

Let it set

Leave the prunes at room temperature until the chocolate is completely set. Avoid the refrigerator at this stage to keep the chocolate shiny rather than dull.

Tips and variations

  • No almonds? Toasted hazelnuts or pecans work wonderfully too.
  • For a festive touch, sprinkle with fleur de sel, grated orange zest, or crushed pistachios before the chocolate sets.
  • Craving more indulgence? Try milk chocolate or white chocolate as an alternative.
