A summery side dish that brings the vibes of vacation and spontaneous barbecues.
- Prep time: 10 minutes
- Cook time: 20 minutes
When corn is in season, keep it simple. Slather it with a fragrant butter infused with fresh cilantro and lime, pop it in the oven, and let the magic happen. The result: golden, tender ears with that little taste of somewhere exotic that turns any meal into a fiesta.
Ingredients
-
butter
-
coriander
-
corn on the cob
-
lime juice
Recipe steps
Prepare the flavored butter
In a bowl, mix the melted butter with the finely chopped cilantro and lime juice. Stir well until you get a smooth mixture.
Prepare the corn
Preheat your oven to 200°C (400°F). Line an oven-safe dish with aluminum foil. Place the corn cobs inside.
Cook the corn
Generously pour the cilantro butter over the corn cobs. Cover tightly with another sheet of aluminum foil. Bake for 20 minutes.
Serve and enjoy
Remove the corn from the oven, carefully peel back the foil (watch out for the steam!), and serve immediately alongside your grilled meats or any summer dish.
Tips and variations
- No cilantro? Flat-leaf parsley or fresh mint also work great for a different but equally delicious version.
- For a spicy kick, add a pinch of Espelette pepper or a few drops of Tabasco to the butter.
- You can also grill the corn on the barbecue: brush them with butter and cook directly on the grill, turning regularly.
Anti-waste tips
Don’t throw away the lime zest!
You can for example:
- Finely grate it and mix it into the butter for even more flavor
- Freeze it to add zing to future dishes, desserts, or cocktails
- Dry it out to flavor your teas or herbal infusions
