A surprising recipe that proves radishes aren't just for snacking.
- Prep time: 15 minutes
- Cook time: 15 minutes
Often relegated to the role of raw veggies, radishes can actually transform into tender, delicately sweet vegetables once cooked. This warm pan-roasted dish reveals a lesser-known side of the radish. A simple, quick recipe that's perfect for giving new life to those forgotten radishes in your fridge.
Ingredients
-
radishes
-
olive oil
-
honey
-
clove of garlic
-
lemon juice
-
salt and pepper
-
chives
-
curly parsley
Recipe steps
Prepare the radishes
Wash the radishes thoroughly. Cut off the greens, setting them aside if they’re still fresh (they’re edible!). Trim the radishes slightly and cut them in half if they’re large.
Even if slightly soft, they’ll firm up during cooking.
Start cooking
Melt the butter or heat the olive oil in a large skillet. Add the radishes cut-side down and let them brown for 5 minutes without stirring too much.
This step develops slightly caramelized notes.
Season and soften
Add the minced garlic, honey, salt, and pepper. Gently stir, then cover and cook for another 5 to 8 minutes, until the radishes become tender.
They should remain slightly crisp in the center.
Finish the dish
Remove from heat, add the lemon juice and chopped fresh herbs. Give it one final stir and serve immediately.
This finishing touch brings freshness and balance.
Tips and variations
- Heartier version: Add pre-cooked new potatoes to the pan for a nourishing spring skillet meal.
Anti-waste tips
Don’t toss the greens! Blend them into pesto or add them to a soup.
Soft radishes? Soak them in ice water for 1 hour before cooking to firm them up.
Leftover cooked radishes? Blend them into a spread with cream cheese or yogurt.
